Syrup Season: With the passing of Easter so ends another maple syrup season. My father taps and boils in Ontario and this year he doubled his operation and taps 600 trees which brought in 385 litres of syrup. It is delicious as always! I went up there last weekend while Claire stayed in Montreal and had a girly weekend. I was there helping my father start cutting wood for next year. He went through an unbelievable amount this year and intends to add 30% more taps next year so he's going to need a whole lot more.
